  • HOW TO PRINT RECIPES & NAVIGATE ON THIS BLOG

    PRINTING RECIPES

    Click on the title of the recipe, then look at the bottom of that recipe and you will see where it says, “Print and PDF”. Click that and you should be able to print the recipe. You can delete the picture by “checking” no images at the top of the page and if you hold your mouse over any part of the text you want to delete, it will turn yellow and you can delete that part. You can also “save” the recipes by clicking on “PDF”.

    NAVIGATION

    Click the photos on the left and right sidebars of the blog to visit the different types or recipes, such as "appetizers & dips", "crockpot recipes", etc.

ZUCCHINI OATMEAL COOKIES

Zucchini Oatmeal Cookies - CopyThis recipe offers a way to use up all that zucchini from the garden or frozen shredded zucchini. These are great cookies and your children will not even realize they are eating a vegetable in this little treat.

3/4 cup shortening
1 cup honey
2 eggs
1 cup all-purpose flour
1/2 cup whole wheat flour
1 1/2 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoon nutmeg
1/4 teaspoon ground cloves
1/2 teaspoon salt
1 1/2 cups zucchini, grated
1 cup raisins
2 cups quick-cooking oats
1 cup walnut pieces
 
Cream shortening and honey, add eggs and beat well.  Mix in flours, spices, and zucchini and continue mixing.  Fold in oats, raisins and nuts.  Drop by tablespoons on a greased cookie sheet.  Bake in preheated 350 degree oven 10 to 12 minutes.   Makes 3 to 4 dozen depending on size you make cookies.  Enjoy!

  2. I love this recipe and I think my girlfriends would like this for dessert at game night this week. However, school starts Monday and I’m not sure I will have time to bake but this will be one I definitely will try soon, yum!

  6. If you don’t have whole wheat flour can you use all purpose flour?

    • Wendy, I think you could. I have not tried that way but most recipes you can use all purpose in place of whole wheat. Let me know how it turns out if you try it. Thanks.

  7. I will try this recipe, but do have to use whole wheat flour? can i use all regular flour?
